For many people, life just isn’t as fun without dessert. You can blame it on growing up during the days of Twinkies and Snickers or our society’s tendency to overload on sugar even during regular meals. Making dessert a comfort food to most people.
Because of this tendency we possess to enjoy something sweet, particularly following a meal, it can be very difficylt to completely eliminate dessert. In fact, studies have shown that people often fil when they are following overly restrictive diets, because it is too difficult to follow on a long-term basis. Recipes for St. Patrick’s day is not that different from everyday Irish cooking. Here are two very tasty and easy St. Patrick’s day snacks for any party.
The first recipe is for a tasty dip. What would any party be without a good dip?
Tasty Cheese and Onion Dip
What You Need:
1 (15 oz.) jar Cheese Whiz 1/3 C beer 1/2 C onion, finely chopped
How to Make It:
Melt the Cheese Whiz in the microwave as directed on the jar label. Place the melted cheese in a serving bowl. Stir in the beer until well combined. Fold the chopped onions into the cheese mixture. Serve at room temperature or on a warming plate.
Serves: 16
Serve this dip with pretzels, cubes of bread or rye rounds and watch it disappear quickly.
This tasty dip can be served as a started in the form of a fondue. If you serve it as a starter serve it with cubes of tasty crusty bread. You can make your main course smaller after this as your guests will really tuck into the bread and will not be so hungry afterwards!
The next St. Patrick’s Day recipes are for tasty corned beef puffs. The puffs may be a little bit of a challenge if you have not made them before. The most important part is to stir the flour into the mixture until it forms a ball in the middle of the pot. Other than that they cannot really go wrong. It is actually much easier than it may sound. Try them once in advance and you’ll be able to make them for your guests with confidence!
Tasty Corned Beef Puffs
What You Need:
1/2 C flour 1/2 C rye flour 2 t parsley flakes 1/4 t salt 1/2 t + 1/8 t garlic powder, divided 1 C of water 1/2 C butter 4 large eggs, well beaten 1/4 C caraway seeds 2 (8 oz.) pkgs. cream cheesed softened 1/2 C mayonnaise 1/4 C sour cream 2 T chives, minced 1 t horseradish mustard 2 (2 ½ oz.) pkgs. deli styled corned beef, chopped 10 green olives, chopped
How to Make It:
Set the oven temperature to 400 degrees and allow the oven to heat while preparing the puffs. Place both types of flour in a mixing bowl. Add the parsley flakes and salt. Sprinkle in the 1/2 t of the garlic powder. Toss to combine the ingredients together well then set aside. Pour the water into a small saucepan. Add the butter and place the saucepan over medium heat. Bring the water to a brisk boil and allow the butter to melt. Carefully add the flour mixture and stir until balls begin to form. Remove the pan from the heat and carefully stir in the eggs until well combined. Grease a large cookie sheet well. Drop the dough mixture by a tablespoon onto the prepared cookie sheet about 2 inches apart. Sprinkle the caraway seeds over the top of each dough mound. Bake 18 minutes or until a nice golden brown. Remove to wire racks and cut a small slit in the side of each puff to allow the steam to escape. Place the softened cream cheese into a medium size mixing bowl. Fold in the mayonnaise and sour cream until well combined and the mixture is smooth. Add the chives and mustard and blend the ingredients together well. Fold the corned beef into the mixture until completely combined through the mixture. Add the olives and blend in well. Cut each puff in half with a sharp knife beginning where you made the original slit. Spread the filling onto the bottom half of each puff. Place the top half back on the bottom half of each puff. Refrigerate for at least 30 minutes before serving.
Serves: 24
If you are cooking corned beef for your dinner use small portion to make this filling instead of the deli corned beef. It will take 1/2 to measure out the same amount. Onions can also be added in place of the olives if you prefer.

Recipes for American Comfort Foods

Green Bean Casserole
Ingredients:
4 cups of cooked, cut green beans
1 can of cream of mushroom soup
1 1/3 cup of French fried onions
1/2 cup of milk
1 tsp of soy sauce
a bit of black pepper
Directions:
In a large casserole dish, mix together the green beans, milk, cream of mushroom soup, soy sauce, pepper, and 2/3 cup of the French fried onions. Bake for 25 minutes at 350 degrees F (or until it starts to bubble). Remove from the oven and stir the beans well. Sprinkle the remaining French fried onions on top and put back in the oven for an additional 5 minutes or until the onions start to brown.
Macaroni and Cheese
Ingredients:
1/2 lb of Velveeta cheese
2 1/2 cups of uncooked macaroni noodles
3 tbsp of butter
1 qt of milk
Directions:
Melt the butter and pour into a baking dish with the macaroni noodles. Stir well until the butter coats all of the noodles. Cut the Velveeta cheese into chunks and add to the milk and macaroni mixture. Bake for about a half an hour at 325 degrees F.
Chicken and Dumplings
Ingredients:
4 cups of boneless, skinless chicken chunks
2 1/2 cups of chicken broth (add more if you like yours very soupy)
1 cup of sliced carrots
1 1/2 cups of chopped potatoes
salt and pepper to taste
1 bay leaf (optional, but nice!)
Directions:
In a large stew pot, simmer the chicken in the broth with salt and pepper on a low heat for about thirty minutes. Add the bay leaf, chopped carrots, and potatoes and increase to medium heat. Cook for 30 minutes, or until the potatoes have softened. Make sure not to overcook as the potatoes will turn mushy.
Dumplings:
1 cups of flour
2 tsp of butter
4 tsp of baking powder
1/2 tsp of salt
3/4 cup of milk
Combine the flour, baking powder, and salt together. Slowly add in the milk and butter, then mix thoroughly. If you prefer, you can add a teaspoon or two of parsley flakes. Drop by the spoonful on top of the chicken and broth during the last 15 minutes of cooking and cover.
Oatmeal Raisin Cookies
Ingredients:
3 cups of uncooked oats
1 1/2 cups of raisins
1 cup chopped walnuts (optional)
1 1/2 cups of flour
1/2 cup of granulated sugar
1 cup firmly-packed brown sugar
1 cup of softened butter
2 eggs
1 tsp of baking soda
1/2 tsp of salt
1 tsp of cinnamon
1 tsp of vanilla
Directions:
In a large bowl, beat together the granulated and brown sugars with the butter until it turns creamy. Mix in the eggs and vanilla. Stir in the flour, baking soda, salt, and cinnamon. When this is well mixed, add the oats, raisins, and walnuts. Stir well, then drop by the spoonful onto un-greased cookie sheets. Bake for about 12 minutes at 350 degrees F. Allow the cookies to cool on the cookie sheet a few minutes before removing them to wire racks to cool completely.

Old-fashion Barbecue Short Rib Bake and Potato Salad Meal Using Vintage Recipes

BARBECUE SHORT RIB BAKE
4 to 5 lbs beef short ribs, cut in serving size pieces
Salt and Pepper
1 medium onion, chopped
1/2 cup diced celery
3 tbsp salad oil
3/4 cup ketchup
1/2 cup water
1/4 cup brown sugar
1 1/2 tbsp Worcestershire sauce
2 tsp seasoned salt
1 tsp prepared mustard
Arrange ribs in a 9×13x2-inch baking pan. Sprinkle with salt and pepper. Bake at 425 degrees for 40 minutes. Meanwhile, cook onion and celery in oil in a small saucepan until they are tender. Add remaining ingredients; mix well. Simmer gently about 20 minutes, stirring occasionally. Remove ribs from oven; drain excess fat. Baste ribs with about half the sauce. Lower oven temperature to 350 degrees; bake ribs 1 hour longer until fork tender. Baste occasionally with remaining sauce. Makes 6 to 8 servings.
OLD-FASHIONED POTATO SALAD
This recipe is from an old newspaper clipping advertising Marzetti dressings.
4 cups cooked, diced, cooled potatoes
2 hard-cooked eggs, diced
1/2 cup chopped celery
1/4 cup chopped onion
1/4 cup chopped sweet pickles
2 tbsp chopped pimento, optional
1/2 cup Marzetti slaw dressing
1 tbsp pickle juice
Salt and Pepper to taste
In a large bowl, combine all ingredients. Mix well. Chill to blend flavors. Garnish with additional hard-cooked egg slices and tomato wedges, if desired. Keep any leftovers in the refrigerator.
CHEWY NUT SQUARES
This is a recipe from an old KARO syrup advertisement.
1 1/4 cups unsifted flour
1 cup firmly packed brown sugar
1/2 cup margarine
2 eggs, slightly beaten
1/2 cup KARO dark corn syrup
1 tsp vanilla
1/4 tsp salt
1 cup chopped pecans
1/2 cup flaked coconut
Mix 1 cup flour and 1/2 cup of the brown sugar. Cut in margarine until fine crumbs form; pat into greased 8″ square pan. Bake in 350 degree oven for 20 minutes. Remove. Mix remaining flour and sugar and remaining ingredients. Pour over crust. Bake 30 minutes or until top is set. Cool. Cut into 16 squares.

The problem is most of us like soul food , but in this fast-food age less of us know how to cook those magical meals our grand mothers and great-grandmothers cooked with ease. If you’re a new mother, wife, single man or house-husband you may have this desire or need to cook. But you may lack the mental tools and skills to pull it off.
Fortunately the internet has dozens of soul food recipe sites with those favorite dishes you enjoyed since you were a child. You know, the one’s your great-grandma used to prepare for holidays, birthdays and special occasions. That’s good news, but you may be one of the millions of “recipe challenged”. Meaning you can read a recipe, but the results always turn out between weird looking and out-right disaster.
Don’t panic, here’s 3 ways to cook soul food recipes more confidently.

3. Know Your Measurements.
This is one of the quiet but important keys to cooking with confidence. Traditionally our grandmothers and great-grandmothers used guesstimates based on their experience. For example, a dash of this, a pinch of that. To give you quick confidence when preparing any recipe, get these 3 important - but inexpensive tools. A measuring cup, measuring spoons and a small scale. By using these simple tools you’ll have the confidence your measurements are accurate and your portions are right. They will save you the cost of the recipe failures you have to throw in the garbage can. That cost savings alone is worth the small investment, Don’t you agree?

TASTY ONION MEATLOAF
1 envelope (1-oz) Onion Soup and Recipe Mix
2 lbs ground beef
1 cup dry bread crumbs
1/2 cup quick-cook oats
2 eggs, lightly beaten
3/4 cup water
1/3 cup ketchup
Preheat oven to 350 degrees.
Combine the onion mix and ground beef until well mixed. Add the bread crumbs and oats to the mixture. Add the eggs, water, and ketchup. Use hands to mix well. In a large baking pan form the mixture into a loaf. Bake approximately 1 hour until done.
CALIFORNIA BLEND VEGETABLE CASSEROLE
2 lbs frozen California Blend Vegetables
1 lb Velveeta Cheese
1 1/2 pkg Town House or Ritz crackers
1 1/2 sticks butter
Cook vegetables according to package directions. Drain well. Place vegetables in a 9×13-inch pan. Cut cheese into cubes and spread over the vegetables. Melt butter. Crush crackers into fine crumbs; mix with butter and sprinkle over cheese. Bake at 350 degrees for 20-25 minutes.
BLACKBERRY CUPS
6 sheets frozen phyllo dough, thawed
nonstick cooking spray
1 pint fresh blackberries
2 tbsp Splenda
1 cup sugar-free Cool-Whip
1 carton (6-oz) lite custard-style peach yogurt
Preheat oven to 400 degrees. Get out 6 large custard cups.
Cut phyllo dough crosswise into 4 pieces. Place 1 sheet phyllo dough on work surface keeping the remaining sheets covered with plastic wrap and a damp kitchen towel. Lightly coat first piece of the sheet of phyllo dough with nonstick cooking spray and place in a large custard cup. Place second piece of first sheet atop the piece in the cup, alternating corners; spray with cooking spray. Repeat with the other two pieces, alternating corners. Repeat this process with the other 5 sheets of dough into the remaining 5 custard cups. Place custard cups on a baking sheet and bake approximately 15 minutes or until the pastry is golden. Let cool to room temperature.
While phyllo cups bake, combine the blackberries and sugar in a small bowl and allow to stand for 15 minutes. Mix the Cool Whip and yogurt in a medium bowl. Reserve 1/2 cup of the blackberries for garnish. Fold the remaining blackberries into the yogurt mixture. Spoon mixture into the cooled phyllo cups. Garnish with the reserved berries.

I’ve always discovered that the scary and much maligned meatloaf is really the ultimate comfort food in both stomach and wallet. This is an important meal at a typical cost per serving of $1.20. You actually cannot go wrong making this recipe on Sunday! Doris’s delectable beef Loaf Makes 8 Servings one tablespoon olive oil one tablespoon butter 1 onion, chopped 1 cup mushrooms, cut half cup sour cream 1 cup oatmeal one teaspoon salt 1 / 8 teaspoon pepper 1 pound ground beef half pound ground pork 0.33 cup ketchup three spoons mustard two large spoons brown sugar 1. In a little frying pan, heat olive oil and butter over gentle heat. Add onions and mushrooms. Cook and stir until vegetables are tender and mushrooms have given up their liquid. Remove to big bowl and let stand for 10 minutes. Two. Heat range to 350F. Add ground meats, mixing with your hands until combined . Form into 2 loaves and place on a broiler pan. Three. In a small bowl, combine ketchup, mustard, and brown sugar and spoon over loaves. Tent meatloaves with foil and let stand for ten mins before serving. For the best meatloaf, try mixing all of the ingredients before you add the beef. Work the following mixture as little as feasible and don’t compact it. Let the meatloaf stand for 10 mins, covered, after it’s cooked. Be sure to cool remains soon. Leftover meatloaf can be used in place of meatballs in numerous recipes and naturally the world famous meatloaf sandwich could be a great leftover for the week.

This first recipe is for Amish bread, which is essentially a sweet white bread. Slice it up for sandwiches or toast slathered with butter and preserves. YUM!
Ingredients
6 c. all-purpose flour
1 1/2 tsp. salt
1 1/2 tbsp. active dry yeast
2/3 c. white sugar
2 c. warm water
1/4 c. vegetable oil
To make: First, you need to activate the yeast. For this, you’ll want to get a large bowl and add the water and sugar. Once the sugar is dissolved, add the yeast. Let this sit until the yeast takes on a foamy look. Next, add the oil and the salt to the yeast. Be careful not to stir too vigorously.
Mix in the flour one cup at a time. Set that aside and sprinkle a handful of flour on the (clean!) counter top. Transfer the dough from the bowl to the counter and begin to knead until the dough is smooth. If your dough is still very sticky, sprinkle flour into it as you knead until it becomes smooth.
Oil a large bowl and roll the dough just enough to give the dough a very light coat of oil. Put a damp tea towel over the bowl so the dough can rise (double in size). This usually takes about an hour.
Take the dough out and knead again for a few minutes. Split the dough into even halves and shape them into loaves. Place each loaf into a well-oiled bread pan and leave it to rise for about 30 minutes, or until the dough has risen about 1 inch above the top of the pan. Place in a preheated oven at 350 degrees F and bake for about 30 minutes.
This next recipe we have is for a Jewish bread called Challah. It’s a very simple bread that is rolled into ropes and braided before baked. Challah will impress your friends and family in both the looks and the taste department—resulting in nods of approval and a boost to your pride!
Ingredients
7 1/2 c. bread flour
4 1/2 tsp. active dry yeast
3/4 c. white sugar
1 tsp. salt
1 1/2 c. warm water
1 c. margarine (melted)
3 eggs (beaten) plus 1 egg (beaten)—keep separate
To make: In a bowl, add warm water, melted margarine, the 3 beaten eggs, and sugar. Mix thoroughly. In a separate bowl, mix together the flour, yeast, and salt. Slowly add the liquid ingredients to the dry and mix together.
Sprinkle a handful of flour on a counter-top and knead the dough until smooth. Add a few sprinkles of flour here and there if the dough seems too sticky. Split the dough into equal halves. Take each half and split it into three equal pieces (so you have six smaller mounds of dough). Roll each mound into ropes about 3/4 inches thick (you can do this by rolling them between your hands “prayer” style).
Once all six ropes are equal in size and length, you’re going to braid them into two loaves. To do this, take three ropes and pinch them together at the top. Proceed to “braid” them, pinching them together at the bottom. Do the same for the three remaining ropes. If you can’t braid, just make two ropes per loaf and twist them together.
Grease a cookie sheet and transfer the loaves onto it. Brush them with the last beaten egg. Put them in a warm place to rise until they have doubled in size (about an hour or so). Bake in a preheated oven at 325 degrees F for 20 - 30 minutes.
If you’re looking to fill the chilly autumn or winter mornings nursing a hunk of sweet bread and a steaming cup of coffee or tea, then we have just the recipe for you! Portuguese sweet bread is brilliant on its own or warmed with butter. You can even sprinkle a bit of cinnamon on top for a spicy treat. But best of all: it’s easy to make!
Ingredients
6 c. all-purpose flour
2 pkg. active dry yeast
3/4 c. sugar plus 1 tsp. sugar
1 tsp. salt
1/4 c. warm water
1 c. lukewarm milk—scalded, then cooled
3 eggs plus 1 egg
1/2 c. butter—softened
To make: Dissolve the yeast in the warm water. Once it has dissolved, add the milk, 3 eggs, butter, 3 cups of flour, 3/4 cup of sugar, and salt. Mix together, then stir in the remaining flour.
Take a handful of flour and sprinkle on the counter-top. Knead the dough until it is smooth (it should take on an elastic texture). Grease a bowl and place the dough inside, turning it over so the dough takes on a thin coating of grease. Cover with a wet tea towel and set in a warm place until the dough has doubled in size (usually this is about 1 and a half to 2 hours).
Knead the dough for a minute or two, then divide it into equal halves. Shape each half into a loaf and place in a greased bread pan. Cover with a towel and let it rise for another hour. When the loaves have risen, beat the remaining egg and brush it over the loaves. Preheat the oven to 350 degrees F and bake the loaves for about 35 - 40 minutes, or until golden brown.
You should find that these breads are all fairly simple in preparation and will deliver a wonderful result that you can enjoy time and time again. To make things easier, double the recipe and freeze a few loaves for when company comes or to save as a snack when you feel peckish. Give these recipes a try and you never know—you may find that you have knack for bread-making after all!

Hamburger Steaks With Brown Gravy Recipes

When I make hamburger steaks with brown gravy, my recipe calls for Rawleigh Steak and Hamburger Seasoning Mix, as well as Rawleigh Onion Flakes — they are well worth mail ordering for, as nothing in ordinary grocery stores is comparable. A pinch of kosher salt, a touch of Worcestershire sauce, and the patties are ready to be cooked; in the winter, you have to resort to frying or broiling, but in summer you definitely want to grill!
The brown gravy for my hamburger steak, too, must have Rawleigh’s Brown Gravy Mix — no other mix can compare. You can make it according to the package directions (and isn’t that a great jar, by the way, rather than those packets that spill powder everywhere when you tear them open?): 2/3 cup gravy mix combined with 1 cup cold water, then whisked into 3 cups boiling water until thickened. But I like to tinker a bit, so here’s how my hamburger steak with brown gravy recipe looks:
2 pounds ground beef
3 tablespoons Rawleigh Steak and Hamburger Seasoning Mix
2 tablespoons Rawleigh Onion Flakes
1/2 teaspoon kosher salt
2 tablespoons Worcestershire sauce
Combine ingredients, divide into 6 patties, and cook to desired doneness.
1 tablespoon butter
8 ounces sliced mushrooms
1/3 cup red wine (one that’s worth drinking!)
2/3 cup cold water
2/3 cup Rawleigh Brown Gravy Mix
3 cups boiling water
Heat butter in a skillet, and add mushrooms; sauté until golden brown. Meanwhile, combine wine and cold water; stir in gravy mix. Whisk mixture into boiling water and cook until thickened. Stir mushrooms into brown gravy. Place hamburger steaks onto a serving platter and top with the brown gravy. Serve hot to a hungry family!
This is easy enough to make for a quick weeknight dinner, but also sophisticated enough to be served at a dinner party. My hamburger steak with brown gravy recipe is an all-purpose hit!
