I’ve always discovered that the scary and much maligned meatloaf is really the ultimate comfort food in both stomach and wallet. This is an important meal at a typical cost per serving of $1.20. You actually cannot go wrong making this recipe on Sunday! Doris’s delectable beef Loaf Makes 8 Servings one tablespoon olive oil one tablespoon butter 1 onion, chopped 1 cup mushrooms, cut half cup sour cream 1 cup oatmeal one teaspoon salt 1 / 8 teaspoon pepper 1 pound ground beef half pound ground pork 0.33 cup ketchup three spoons mustard two large spoons brown sugar 1. In a little frying pan, heat olive oil and butter over gentle heat. Add onions and mushrooms. Cook and stir until vegetables are tender and mushrooms have given up their liquid. Remove to big bowl and let stand for 10 minutes. Two. Heat range to 350F. Add ground meats, mixing with your hands until combined . Form into 2 loaves and place on a broiler pan. Three. In a small bowl, combine ketchup, mustard, and brown sugar and spoon over loaves. Tent meatloaves with foil and let stand for ten mins before serving. For the best meatloaf, try mixing all of the ingredients before you add the beef. Work the following mixture as little as feasible and don’t compact it. Let the meatloaf stand for 10 mins, covered, after it’s cooked. Be sure to cool remains soon. Leftover meatloaf can be used in place of meatballs in numerous recipes and naturally the world famous meatloaf sandwich could be a great leftover for the week.

The pressure continues to mount for soul food recipes to adapt to healthier standards. The southern food has a long reputation for high fat, sodium and calorie ingredients. Much of these ingredients have proven to encourage obesity, high blood pressure, diabetes and other ailments. At last report many free soul food websites are starting to adapt to healthier measures. Many have stopped using traditional seasonings in their recipes such as fat back, ham hocks and other high fat content seasonings. Instead more natural seasonings and spices have slowly replaced the traditional seasonings to the delight of health experts and medical professionals.
The increasing pressures have also caused more soul food restaurants to change to healthier cooking techniques, For example, more eating establishments are including more garden salads, fresh fruits and even salad bars on their menus to cater to their health conscious customers. In addition more eating establishments are including more baked, roasted and grilled items on the menu and less deep-fat fried items. The biggest concern was how their customers would react. Most were afraid they would lose their customer base by changing from the traditional southern prepared menus.
Many have discovered by cooking healthier they have attracted a whole new customer base. So, they’ve found switching to a healthier menu was not only socially responsible - but profitable as well. They’ve attracted the younger, upwardly mobile crowd. This crowd is attracted to lighter, healthier cooking, as opposed to the heavier traditional southern cooking that tends to weigh them down.
As this healthier food movement continues to grow and expand, it’s predicted more soul food websites, cookbooks and restaurants will follow suit. Like it or not that’s the way the trend is moving. Many have found they’ll either have to move with this trend or get trampled under food by it. Now, except for the occasional family night out, they all eat at the dinning room table every night. In this case soul food cooking has brought a family together. No doubt this same scenario is catching on with other families and couples. As more families and couples are forced to eat more meal at home and get reacquainted with each other again this trend is expected to continue. This is a case of soul food helping to bring more souls together.
