Quick and Easy Dinner Recipes

This first recipe is great for the Mexican food lover. The soup and sour cream combine with the taco sauce and chilies to create a creamy but flavor filled sauce. The chips add a simple but nice contrast. You can control the spiciness of this dish by using either a hot or mild taco sauce.
Chicken n’ Chips
1 can cream of chicken soup
8 ounces sour cream
2 tablespoons taco sauce
1/4 cup chopped green chilies
3 cups cubed chicken
12 slices American cheese slices
4 cups broken tortilla chips
Stir together the soup, sour cream, taco sauce and chopped chilies.
In a shallow 2 qt baking dish layer 1/2 of the chicken, soup mixture, cheese and tortilla chips. Repeat Layers.
Bake uncovered at 350 degrees for 25-30 minutes or until bubbly.
Serve the Chicken n’ Chips with Spanish rice, refried beans and a fresh, crisp salad.
The second recipe is an easy spin on the traditional comfort food of Beef Stroganoff. The aroma of the garlic cooking is fabulous. The flavors meld together very nicely.
Quick and Easy Beef Stroganoff
1 pound beef round steaks - cubed
1 onion chopped
1 4-ounce can mushrooms do not drain
2 teaspoons minced garlic
3 teaspoons beef bouillon
3 cups water
4 cups medium egg noodles
1 cup sour cream
Spray a large pot with cooking spray. Cook beef, onions, mushrooms and garlic over medium high heat. Stir occasionally until meat is cooked through.
Add water, beef bouillon, egg noodles and sour cream to the meat mixture. Turn the heat up to high and bring to a boil.
Once boiling, turn heat down to low (do not cover). Cook on low for 5-7 minutes until pasta is desired doneness, stirring occasionally.
Remove from heat. Let sit 4-5 minutes before serving. Sauce will thicken as it stands.
To round out this meal, serve with fresh rolls that are warmed in the oven and canned or frozen peas.
This third recipe is a stick to your ribs kind of meal. The stuffing gives this recipe a nice change of pace from your tradition meat and potatoes type dinner. This recipe is also very budget friendly.
Hearty Hamburger Casserole
1 pound ground beef
1 19-ounce can chunky vegetable soup
1 6-ounce package instant stuffing mix
1/2 cup shredded Cheddar cheese
Brown beef in a large skillet until no longer pink. Drain any fat and stir in soup. Set aside.
Prepare stuffing mix according to package directions while beef is cooking.
Spray a 2 qt baking dish with cooking spray. Spoon half of the stuffing into baking dish. Layer with beef mixture, cheese and remaining stuffing.
Bake, uncovered, at 350 degrees for 30-35 minutes or until heated through.
This is pretty close to a one-dish meal, but to make it complete, serve with fresh, warmed rolls and a side salad.
These quick and easy dinner recipes should provide some variety to your dinner repertoire and at the same time get dinner on the table fast!

Indeed, Lutongbahay.com is a community I feel comfortable hanging out in. It feels like being with like-minded friends in a cozy neighborhood home. The big bonus is that this home happens to have a library filled with interesting articles that are all free to read online. Of course I couldn’t stop myself from settling down to have a good read.
One of the articles that immediately caught my eye was titled “De-Fattening” Your Recipes. Now that’s something I would really benefit from. Sometimes the craving for a certain dish is just so great despite the fact that I know it has a high fat content. Learning how to make any dish low fat – or at least lower fat – would make me feel less guilty and much healthier, too.
Now let me start from the end of the article because the last tip had me gasping then laughing out loud. It said, “Don’t follow directions.” Imagine that. Well, it did make sense. According to the article, you should remove, reduce or replace any fat in the recipe. Sometimes removing a fatty ingredient makes no difference at all in flavor, or is at least barely noticeable. If it’s not possible to remove an ingredient, replace it with a substitute. Fatty cuts of meat, for example, can be done away with in favor of leaner cuts. Butter can be replaced completely or partly with light sour cream or, better yet, non-fat sour cream. Half of the oil required can be replaced with unsweetened applesauce. In cakes, the oil can be replaced with liqueur, sherry, fruit juice or fruit puree. The article also recommends using “better” fat such as olive oil whenever appropriate. That I most certainly agree with. The flavor of extra virgin olive oil more than makes up for all the other fats removed.
It turned out that the article title was not just referring to fat content per se but to the fattening characteristic of certain food, as well. It, therefore, recommended cutting down on sugar, too, and switching to whole grains while adding more fruits and vegetables to the diet. After reading that article I felt eager to start experimenting with the recommended substitutions and start cooking healthy again.
Okay, I have to stop before I give a rundown of each and every article on the site. All of them seem so interesting. I also need to pace myself to ensure that I will still have something to read when I return to the site, because I do intend to return again and again.

Raw Food: Christmas Food

Christmas is a time when we think of family get-togethers and abundance. It is memory lane for most of us, enjoying friends, memorable times and good comfort, traditional foods. But the weeks after the holidays are usually weight gains, health problems from too many sweets and food.
Today white sugar, white flour, dairy products, trans and saturated fats, refined cars and excess calories are on the “no-no” list … and with the holiday times it feels as if the cakes, cookies and candies will become obsolete. And we begin to feel deprived and panic stricken. After all, it is a long-time tradition.
One answer is to make some raw food desserts and take them to get-togethers and family meals. Use nuts, dried fruits, and avocadoes instead of white flour and white sugar. They have a lot of flavor, looks and are good for you. Oh yes … and they are easy to put together. Jenny Cornbleet has a book out called “Raw Food Made Easy for 1 or 2 People”. In it there are desserts – cakes, cookies, fruit crisps, pies, tarts, puddings, mousses, shakes, and ice cream recipes all raw – for holidays and all meals. Guess what? They taste better than their sugar laden counterparts.
One recipe is for a “Flourless Chocolate Cake with Raspberry Sauce” which calls for 1 ½ cups raw walnuts, dash of salt, 8 pitted medjool dates, ¼ cup unsweetened cocoa or carob powder, ½ tsp vanilla extract, and 2 tsp water. For the raspberry sauce you use 1 cup fresh or frozen raspberries (thaw and drain if frozen) with ¼ cup pitted medjooy dates, soaked for 30 minutes and drained. Place the walnuts and salt in a food processor with the S blade and process until finely ground. Add dates, cocoa powder, and vanilla … process until mixture becomes sticky. Add water and process briefly. Transfer to a serving plate and form a 5 inch round cake. Place the raspberries and dates in a blender and mix until smooth, pouring over the cake just before serving.
You do not have to give up all your comfort foods, just find a healthier recipe for it. You will find the dessert to be much tastier. But should you choose to nibble on a few old foods, do so in moderation, do not go overboard, and remember to wait and let your stomach digest properly before the next meal.
