the ultimate comfort food for me is a delicious savory chicken pot pie chuck full of oven roasted chicken carrots peas and a creamy sauce all nestled inside a flaky pie crust.
i attempted to make chicken pot pie yesterday and i followed a recipe which is very unlikely for me i attempted the barefoot contessa recipe i made a homemade pie crust it looked absalutly delicious i baked it for 11/2 hours and when it came out of the oven it was gross it tasted nothing like it did whiel i was mixing it in my skillet please some one tell me what im doing wrong my pot pie filling is to die for when i mix it in the skillet but is gross when its baked please help me am i baking it to long or what please help me make the perfect pot pie
this is my pot pie filling
* 3 whole (6 split) chicken breasts, bone-in, skin-on
* 3 tablespoons olive oil
* Kosher salt
* Freshly ground black pepper
* 5 cups chicken stock, preferably homemade
* 2 chicken bouillon cubes
* 12 tablespoons (1 1/2 sticks) unsalted butter
* 2 cups yellow onions, chopped (2 onions)
* 3/4 cup all-purpose flour
* 1/4 cup heavy cream
* 2 cups medium-diced carrots, blanched for 2 minutes
* 1 (10-ounce) package frozen peas (2 cups)
* 1 1/2 cups frozen small whole onions
* 1/2 cup minced fresh parsley leaves

I am 16 and have a huge project in school where we do something we have always wanted to do.
I am opening a restaurant for a day!
I will have tables, waitresses, everything!
So i want to have a couple dishes on the menu,
i’ve already decided on theme and think southern food, comfort food, but taking on a more gourmet side…. like don’t think meatloaf or anything.
Like one of the main courses right now is a family recipe called beef and noodles that takes all day to cook the beef so it’s nice and tender and you make a gravy with egg noodles….and then put it over mashed potatoes

Dairy free white garlic pizza sauce?

I’m craving a white garlic sauce pizza (with artichoke hearts ) but I can’t find a good garlic white sauce recipe to mock. Butter I can substitute with Earth Balance and milk with unflavored soymilk, and if there’s cheese I can use soy cheese, but I need a good, thick recipe for a homemade sauce so I can get this craving out of the way. I’m 4 months pregnant and craving past comfort foods
It seems that a lot of people suggest using alfredo sauce, is this what the people at Pizza Guys and Pizza Hut use? Or do they have special recipes, and if so does anyone know one? Help a pregger girl out! XP

Does someone have a recipe for tuna-noodle casserole that DOES NOT contain canned soup?

I want to make some “comfort food” to share with a friend who’s having a rough time, but I just can’t find a recipe that uses something other than canned soup for the sauce. The gelatinous, gloppy quality of all those canned cream-of-whatevers just doesn’t cut it for me.
Doesn’t anybody have a great, old-fashioned, flavorful version that uses a bechamel or something like that instead? I would like to be able to make this today, if possible, and I would be SO grateful for any help. Thank you.

I do browse food Network.com often but some of the meals require me to buy 5,000 ingredients and I already have a cabinet full of all types of spices.
Last night was homemade chicken fajitas, the night before Beef stew with tons of veggies, the night before that - I made Penne Vodka with chicken and a side of broccoli. The problem is it is getting cold here and I need some comfort foods for my family.

Please consider now a’ days, with all the ways to view media, ex., Portable DVD Players, Wireless Laptops, or Laptops that are able to Play DVD, and the PSP. All can be setup in a viewing area nearby, or in the Kitchen.
I once lived in a Studio, and the Full Kitchen was in the same room. I could see my Laptop, My TV, or even my PSP from the Kitchen area.
I now have a much larger Kitchen, and I entertain myself with my PSP while I am cooking. I setup the PSP in a Theater type docking station. The PSP plays Video, MP3s and UMD Movies and Games.
Having some sort of Visual aid Video) when learning something, you remember what you learn. ex., Like cooking…

I’ve got the makings for scalloped potatos, garlic mashed potatos or a pkg of premade stuffing from the meat case. I also have a mushroom pasta dish, carrots, peas, corn, broccoli, baked beans and home fries ( frozen)…

So I’m locked in an ice storm, but with power while my friend has none. He’s been surviving on poptarts, salami, and candle-toasted marshmallows for about three days now and I thought I would make something and bring over.
What’s something I can take that will stay fairly hot (can’t reheat) and will serve as kinda comfort food? I was thinking maybe baked mac and cheese, but am open to suggestions. What food would you want someone to show up with?

What can I make with uncooked chicken fat, cooked fat, and pan drippings (fond) from roast chickens?

I am somewhat new to cooking (or at least, BETTER cooking), and while I’m improving I’ve been making roasted chicken a lot lately. I have made some gravy from the drippings which has been quite good, but there is always so much fat and drippings left over (more than two people need for one meal). I have large chunks of chicken fat that I cut from a plump roaster last night and I had loads of delicious seasoned pan drippings afterward. I’ve saved and frozen these ingredients but I need some more ideas from some cooks who use these types of leftover elements. What I can make using them–soups and stews, perhaps? Would the fat be good to use in a roux /gravy for chicken pot pie? I have both raw and cooked fat and lots of fond and drippings. I know it’s not good for us to eat, but some good, old-world comfort foods would be dishy in this midwestern deep freeze right now. Feel free to include recipes….and thank you!!
Okay…heart health advice aside (thanks anyway), I DO realize that after making something with the fat, chilling the dish after the fat rises to the top will solidify and make it easy to remove alltogether, thus eliminating the actual fat as a food product and leaving the flavor instead.

I already looked online and cannot find what I am looking for. I had a recipe that I made a while back that involved chicken, rice, peas, and I believe chicken broth. I made it on my stove, in a skillet. It was so good, and I really want to make it for dinner tonight but I lost the recipe. I was hoping that someone out there could offer me some suggestions. ok it’s my Boyfriends birthday- and we like to go to this place called “the Crab pot” Basically what it is is lobster and shrimp and mussles and clams all cooked in one pot then they give you a hammer and you eat your food with your hands..I know we are savages- Anyways I would like to make it in the comfort of our own home.So we can have all opf our friends be there because it’s more expensive to go out- plus since it’s his birthday I have to be the sober driver..Does anyone have any recipes? or web sites that would have this kind of thing. I am one of those girls that is lucky if I don’t burn my toast in the morning so I really need help. I think they cook it all in one pot- steam it of boil..I have no idea..Help please:)

I love to cook, especially for him. I like unique things, or comfort food. I always give it healthy twists. Like I made healthy Chicken Cordon Blue last week because he wanted to just get the frozen kind. I am very good at stuffed chicken ha ha. Anyway, have any unique recipes or good meals that I can cook for him? I’d rather it be something that involves chicken breasts or ground meat… I’m not gonna be cooking steak, ribs, pork, etc tonight. Also, keep in mind I have no grill, but do have a George Formen and an amazing stove/oven. Thanks!

If so, I’m curious to know…what did you have? Did you keep it simple? Did you have familiar comfort food? Did you try something new? Did you spend very little or alot of thought and effort into preparation?
I wanted to treat my husband to a romantic and very private dinner at our home.
First course: Insalata Caprese.
Second Course: Cremini Mushroom Ravioli in a homemade smoked fontina and bechamel sauce.
Dessert: Homemade chocolate cake covered with ganache and sliced wild strawberries.
We are stuffed! And I’m exhausted from 2 days of searching recipes, shopping, prep, cooking, and clean up. IDK I might take shortcuts and keep it semi homemade next year LOL

Canning & Preserving foods: Is it possible to can soups and stews using my own recipes?

Okay - I’ve decided to enter the world of canning and preserving our own food, but I’m not finding alot of information locally. The only books I have found about canning refer to jams, jellies, and preserves….or fresh garden vegetables.
We frequently share cooked foods with people who are shut in, sick or whatever - but it isn’t always possible to get to the store and get something cooked in time when they need it most. We usually fix comfort foods like Beef Stew, Chicken and Dumplings, or Spaghetti Sauce.
I also have a recipe for Chicken and rice soup that everyone seems to like - especially when they’re getting over the flu.
Before I invest in this any further (purchasing water bath and pressure canners, labeling supplies, etc), I’m curious to know: Is it possible to can these recipes as-is, or would things like potatoes in stew go mushy or would the canning process impact the amount of seasonings I should use (etc)?
More importantly, would canning foods like this pose more of a food safety issue than canning basic fruits, veggies or preserves?
The entire process is a mystery to me for now, but I know I can learn to do it….I just don’t want to make the investment if what I truly want to do isn’t recommended.
