Rice is among the most heavily cultivated of all grains and is the cultivated crop, which is eaten by more people around the world than any other is. In much of Asia, Africa and South and Central America as well as Mexico. As central as rice is to Mexican cooking, it is a relatively recent arrival in the grand scheme of things, having arrived in what is now Mexico with colonists and explorers from Spain and Portugal. The peoples of the new world took to the new grain with enthusiasm and rice was soon one of the most important staples in the Mexican kitchen. Some of the dishes, which are now considered to be traditional Mexican rice recipes date from the early days after rice, began to be cultivated in the Americas.

Authentic Mexican Rice Recipes

Arroz con pollo is both a classic Mexican rice dish and a classic Mexican chicken dish. From the Spanish for “rice with chicken,” this is the Mexican take on this timeless comfort food and it is an incredibly satisfying one. This is one Mexican rice recipe you may want to try making at home - it is a great change of pace from the familiar American version with canned soup.

Arroz con pollo is an excellent example of how recipes, which originated in Spain, became Mexican recipes through adaptation to use locally available ingredients as well as to work in flavors and ingredients, which became popular with the European settlers. Of course, even Spanish paella happens to have a slight Mexican accent due to the inclusion of tomatoes and quite often, bell peppers - both of which are native to the Americas and were brought back to Europe from the new world! Needless to say, this is also a very popular Mexican rice dish with many regional variations being found throughout Mexico, especially in coastal regions of the country.

Lightly seasoned Mexican rice is another of the better-known Mexican rice recipes. This rice is served as a complement to a wide variety of Mexican dishes, particularly beans. This is a dish, which is quite similar to Spanish rice; and just as with paella, this rice actually contains some new world ingredients.

Rice has become almost as important of a dietary staple in Mexico as it is in much of the world. It may not have been in the Mexican culinary repertoire as long as corn or chilies, but it has found a happy place in this one of a kind cuisine and if you enjoy any of these wonderful Mexican rice recipes, you are certainly glad that it made its way over to the Americas.

As the leaves start to turn to fall colors and in the evenings we are tempted to sit by a warm fire, hearty food comes to mind. The fall and winter bring a host of root vegetables, squashes, greens and fruit from which hearty meals can be easily made. The challenge is to keep these dishes healthy that means keeping them as alkaline as possible.

When attempting to reverse the symptoms of acid reflux, diet is probably the most important consideration. That old cliché, “You are what you eat”, has never been more true. If you eat food and drink beverages which are acidic in nature, then it follows, that you will be acidic in nature, as well. If you eat a diet which mainly consists of so called “convenience food”, you don’t stand a chance of being alkaline.

In order to defeat the acid reflux condition, one must strive to correct the pH factor of the body. 7.5 pH is the ideal alkaline body level. You can test the pH level of your saliva with pH paper, which can be purchased at any pharmacy. Some medical authorities claim that all illness, including cancer, cannot exist in an alkaline environment. If that is true, it is certainly food for thought!

It is important to remember that the acid reflux condition could not perpetuate itself without a damaged esophagus. In order to heal this affliction, the esophagus must be allowed to repair. This can be accomplished by eliminating food and drink that are irritants and, or acidic. Avoiding anything which relaxes the LES (lower esophageal sphincter) is another important consideration. The LES is the muscular valve which separates the esophagus and the stomach. It is when this valve relaxes, that acid and pepsin splash up from the stomach into the esophagus and throat, causing acid reflux.

The hydrochloric acid in the stomach has been compared in strength, to the acid in a car battery. With acid reflux, the constant assault of acid causes little lacerations to develop on the lining of the esophagus. Until these lacerations have had a chance to heal, spicy foods, such as acidic tomato products, hot peppers, raw garlic and raw onions should also be eliminated from the diet. They just further irritate the condition. Smoking, drinking alcohol and eating chocolate also relax the LES, thus impeding the healing process.

The key to acid reflux recovery is to eat alkaline, easy to digest nourishing food until the esophagus has healed. Eating early, allowing at least three hours before lying down is an essential habit to develop. Eating slowly and chewing food completely in a relaxed, pleasant and stress free environment is of paramount importance, as well.

I have listed a few of my favorite hearty fall and winter recipes that I enjoyed during my own recovery period. Cooking meat, vegetables, fruit and shellfish in liquids produce delicious dishes which can be made quickly and easily. I have employed a technique called “braising” for the main dish below. It is one of my favorite cooking methods, because it concentrates flavor in a one pot dinner. I have also included a seasonal soup starter and a special desert to complete the perfect cold weather dinner.

Try doubling the main dish and desert recipes so that you can have them later in the week…..less time in the kitchen. Remember, that cooking from scratch instead of relying on convenience foods is a better approach to good health, in general. It’s also nice to know what you’re really eating.

I hope that you enjoy the following seasonal recipes. Even though I have cured myself of acid reflux, I still serve these wonderful hearty dishes on a regular basis. The entire family should enjoy these, too. Well, the children might not like the oysters, but you certainly will. This menu is great for entertaining, as the main and last courses are made in advance and the first course is a breeze. For those of you who live in warmer climes, remember that winter is a state of mind.

BRAISED CHICKEN WITH TURNIPS AND ONIONS

This is a rustic country-style dinner dish which truly embodies the concept of “Comfort Food”. Unlike thick cuts of meat, braising chicken takes a fraction of the time and the chicken absorbs all the flavors of the vegetables and liquids. Mashed potatoes are a perfect accompaniment. This is a serving for four and requires about an hour to prepare.

1 (3 ½ lb.) chicken, cut into 8 serving pieces

½ cup flour for dredging

Olive oil

2 medium sweet onions roughly chopped

4 medium turnips peeled and sliced into ½” pieces *

3 cloves of garlic, finely minced

2 cups chicken stock

2 cups white wine or dry vermouth

2 sprigs of thyme or ½ tsp. dried

1 tbsp. parsley, chopped

Pat chicken dry and season with salt and pepper. Dredge in flour and set aside.

Heat a heavy skillet to medium high and add enough olive oil to coat well

Brown chicken pieces skin side down and turn over in about 7 minutes (This can be done in two batches, if necessary)

Transfer browned chicken to a plate and cover to keep warm

Pour off all but 2 tbsp. of the fat and lower heat to medium low

Add onions and cook covered, stirring occasionally until soft and lightly golden

Add turnips and garlic and cook uncovered for five minutes stirring occasionally to keep onions from burning

Return browned chicken to skillet and mix with vegetables to coat both sides, arranging chicken skin side up

Pour stock and wine over chicken mixture

Sprinkle with thyme

Cover and lower heat to gently simmer until chicken is cooked through and turnips are tender, about 30 to 40 minutes

Transfer chicken and vegetables onto a serving dish

Reduce sauce over high heat, if needed, to thicken

Season sauce with salt and pepper to taste and pour over chicken and vegetables

Sprinkle with parsley

*Parsnips may be substituted for the turnips, or a mixture of the two.

CREAMY NEW ENGLAND STYLE OYSTER STEW

I have heard rumors that oysters are a bit acidic; however, they have never given me indigestion. I confess that this is a rather rich dish, but a small serving will give you more pleasure than pain. One has to spoil themselves occasionally.

1 ½ tbsps. unsalted butter

I dozen freshly opened oysters (or the freshest you can find) with liquid

1/8 tsp. celery salt

1 ½ ounces sherry

Splash of Worcestershire sauce to taste

Cayenne pepper

1 ½ cups whole milk with a little cream added

Chives, chopped

Oyster crackers

Into a double boiler place butter, oysters with liquid, celery salt, sherry and Worcestershire sauce (water in the bottom pan should not touch the top pan)

With a wooden spoon, stir until the oysters are just curling on the edges (do not overcook), about a minute

Pour in milk mixture and continue stirring

Remove from heat just before the boil and serve immediately

Sprinkle each serving with a little cayenne pepper

Garnish with chives

Offer oyster crackers on the side

POACHED ANJOU PEARS IN RED WINE

You have to plan a little ahead for this dish. The pears should be ripe, but still springy to the touch. Buy them a week ahead and place in a paper bag with a banana. Don’t ask me why, but this works. Choose pears with the stem in tact.

8 smallish red Anjou pears

Juice of one lemon

1 cup extra fine granulated sugar

2 cups red wine

¼ tsp. vanilla extract

1 cinnamon stick

Carefully peel pears to the stem (the stem comes in handy for turning and for presentation)

Coat each peeled pear with lemon juice and set aside

Into a saucepan place the sugar, wine, vanilla and cinnamon

Stir over medium heat until the sugar is dissolved

Add pears and reduce heat to a gentle simmer, covered

Poach pears until they are just tender, about 10 to 20 minutes, depending upon the size of the pears, turning once

Remove from heat and allow pears to sit in liquid, turning again so that color is even, another 20 minutes

Remove pears from liquid to desert plates

Reduce liquid over medium high heat to a syrupy consistency and pour over pears

Serve with a dollop of whipped cream and a sprig of mint

Ingredients

8 ounces cream cheese cubed

3/4 cup grated Parmesan cheese

1 stick butter softened

1/2 cup heavy cream

8 ounces fettuccine cooked and drained

1/8 Tsp. fresh grated nutmeg

Directions

In a large saucepan, stir together the cream cheese, parmesan, butter, and cream. Heat, stirring, until smooth. Add hot, cooked fettuccini, and toss until well covered. Serve immediately, sprinkled with nutmeg.

AMATEUR LASAGNA

Ingredients

10 ounces frozen spinach

60 ounces spaghetti sauce, two 30 oz. jars

2 cups ricotta cheese, part skim milk

1 1/2 cups mozzarella cheese, part skim milk shredded

1 egg beaten

8 ounces lasagna noodles

1/8 Tsp. black pepper

1/2 Tsp. oregano, optional

1/2 Tsp. basil, optional

1/2 cup vegetable juice cocktail

1/2 cup water

* Spaghetti sauce is available in a 30 ounce jar and also in smaller containers. For this recipe for pasta, I use about 1-1/2 to 2 jars of the Ragu Sauce in the 30 ounce container.

Directions

1. Thaw the spinach and squeeze dry.

2. In a large container mix the two cheeses, beaten egg, black

pepper, oregano and basil. Add the thawed spinach and blend well.

3. Use a 13 x 9 inch pan. Put a small amount of the sauce in bottom

and spread lightly to cover bottom. This keeps the lasagna from sticking as it cooks, and enables you to remove it easily in neat portions.

4. Place one third of the uncooked noodles, one third of the sauce

and one third of the cheese-spinach mixture. Make 3 layers this way, ending with the sauce.

5. Combine the water and vegetable juice cocktail or tomato juice.

Pour this carefully around the edges of the casserole, moving the noodles slightly with a spatula to get the liquid distributed evenly. Sprinkle with grated parmesan cheese if desired.

6. Cover tightly with foil. Bake at 350 degrees for 1 hour to 1 and

1/4 hours. Remove foil and continue baking for a few minutes more, until lightly browned and bubbling.

7. Let stand for at least 15 minutes before serving. This lasagna can

be sliced with a flat edged spatula and lifted out in serving-sized portions.

PENNE WITH VODKA AND SPICY-TOMATO CREAM SAUCE

Ingredients

1/4 c Extra-virgin olive oil

4 garlic cloves — minced

1/2 t Crushed red pepper — or to taste

Sea salt

28 oz crushed tomatoes in puree

1 lb penne

2 tb Vodka

1 c Heavy cream

1/4 c Fresh flat-leaf parsley — chopped

Directions

In an unheated skillet large enough to hold the pasta later on, combine oil, garlic, crushed red peppers and a pinch of salt, stirring to coat with oil. Cook over moderate heat just until the garlic turns golden but not brown, 2 to 3 minutes. If using whole canned tomatoes, place a food mill over the skillet and puree tomatoes directly into it. Crushed tomatoes can be added directly. Stir to blend, and simmer, uncovered, until sauce begins to thicken, about 15 minutes. Taste for seasoning.

Meanwhile, in a large pot, bring 6 quarts of water to a rolling boil. Add 3 tablespoons salt and the penne, stirring to prevent sticking. Cook until tender but firm to the bite. Drain thoroughly.

Add the drained pasta to the skillet with the tomato sauce. Toss. Add the vodka, toss again, then add the cream and toss. Cover, reduce the heat to low for 1 to 2 minutes to allow the pasta to absorb the sauce. Add the parsley and toss again. Transfer to warmed shallow soup bowls and serve immediately. (Traditionally, cheese is not served with this dish.)

1 large carrot, peeled and sliced 1/4 inch thick

1 stalk celery, sliced 1/4 inch thick

3 cups cooked diced chicken

2 cups wide egg noodles

1/4 cup finely chopped fresh parsley

ground black pepper

Directions:

1. In a large stockpot combine the broth, water, poultry seasoning, thyme, celery, carrot, and onion.

2. Over medium heat, heat to boiling, stirring occasionally then reduce the heat to low. Add the cooked chicken.

3. Cover and cook 15-20 minutes or until vegetables are tender, stirring occasionally.

4. Add the noodles, cook until just tender (about 5 minutes). Stir in the parsley and pepper to taste and serve.

Chicken n’ Chips

1 can cream of chicken soup

8 ounces sour cream

2 tablespoons taco sauce

1/4 cup chopped green chilies

3 cups cubed chicken

12 slices American cheese slices

4 cups broken tortilla chips

Stir together the soup, sour cream, taco sauce and chopped chilies.

In a shallow 2 qt baking dish layer 1/2 of the chicken, soup mixture, cheese and tortilla chips. Repeat Layers.

Bake uncovered at 350 degrees for 25-30 minutes or until bubbly.

Serve the Chicken n’ Chips with Spanish rice, refried beans and a fresh, crisp salad.

The second recipe is an easy spin on the traditional comfort food of Beef Stroganoff. The aroma of the garlic cooking is fabulous. The flavors meld together very nicely.

Quick and Easy Beef Stroganoff

1 pound beef round steaks - cubed

1 onion chopped

1 4-ounce can mushrooms do not drain

2 teaspoons minced garlic

3 teaspoons beef bouillon

3 cups water

4 cups medium egg noodles

1 cup sour cream

Spray a large pot with cooking spray. Cook beef, onions, mushrooms and garlic over medium high heat. Stir occasionally until meat is cooked through.

Add water, beef bouillon, egg noodles and sour cream to the meat mixture. Turn the heat up to high and bring to a boil.

Once boiling, turn heat down to low (do not cover). Cook on low for 5-7 minutes until pasta is desired doneness, stirring occasionally.

Remove from heat. Let sit 4-5 minutes before serving. Sauce will thicken as it stands.

To round out this meal, serve with fresh rolls that are warmed in the oven and canned or frozen peas.

This third recipe is a stick to your ribs kind of meal. The stuffing gives this recipe a nice change of pace from your tradition meat and potatoes type dinner. This recipe is also very budget friendly.

Hearty Hamburger Casserole

1 pound ground beef

1 19-ounce can chunky vegetable soup

1 6-ounce package instant stuffing mix

1/2 cup shredded Cheddar cheese

Brown beef in a large skillet until no longer pink. Drain any fat and stir in soup. Set aside.

Prepare stuffing mix according to package directions while beef is cooking.

Spray a 2 qt baking dish with cooking spray. Spoon half of the stuffing into baking dish. Layer with beef mixture, cheese and remaining stuffing.

Bake, uncovered, at 350 degrees for 30-35 minutes or until heated through.

This is pretty close to a one-dish meal, but to make it complete, serve with fresh, warmed rolls and a side salad.

Sometimes the craving for a certain dish is just so great despite the fact that I know it has a high fat content. Learning how to make any dish low fat – or at least lower fat – would make me feel less guilty and much healthier, too.

Now let me start from the end of the article because the last tip had me gasping then laughing out loud. It said, “Don’t follow directions.” Imagine that. Well, it did make sense. According to the article, you should remove, reduce or replace any fat in the recipe. Sometimes removing a fatty ingredient makes no difference at all in flavor, or is at least barely noticeable. If it’s not possible to remove an ingredient, replace it with a substitute. Fatty cuts of meat, for example, can be done away with in favor of leaner cuts. Butter can be replaced completely or partly with light sour cream or, better yet, non-fat sour cream. Half of the oil required can be replaced with unsweetened applesauce. In cakes, the oil can be replaced with liqueur, sherry, fruit juice or fruit puree. The article also recommends using “better” fat such as olive oil whenever appropriate. That I most certainly agree with. The flavor of extra virgin olive oil more than makes up for all the other fats removed.

It turned out that the article title was not just referring to fat content per se but to the fattening characteristic of certain food, as well. It, therefore, recommended cutting down on sugar, too, and switching to whole grains while adding more fruits and vegetables to the diet. After reading that article I felt eager to start experimenting with the recommended substitutions and start cooking healthy again.

Okay, I have to stop before I give a rundown of each and every article on the site. All of them seem so interesting. I also need to pace myself to ensure that I will still have something to read when I return to the site, because I do intend to return again and again.

Comfort food is making a big comeback and what says comfort better than this old-fashion recipe for roasted pork tenderloin with vegetables meal?  Perhaps adding another old recipe for an Apple Spice Cake for dessert.  Yep, that’s it.  Double comfort.

ROASTED PORK TENDERLOIN AND VEGETABLES

2 pork tenderloins, about 3/4 lb each

2 lbs red potatoes, scrubbed and quartered

1 lb carrots, halved and cut into 2-inch pieces

1 medium onion, cut into wedges

1 tbsp olive oil

2 tsp dried rosemary, crushed

1 tsp sage

1/2 tsp salt

1/4 tsp pepper

Place tenderloins in a shallow roasting pan that has been lightly greased. Arrange the vegetables around the pork; drizzle with the oil. Combine the seasonings and sprinkle of the pork and the vegetables. Bake, uncovered, in a 450 degree oven for about 40 minutes or until a meat thermometer reads 160 degrees. Stir the vegetables occasionally during the cooking process.

Makes 6 servings. 3-oz of meat + 1 cup of vegetables equals 331 calories, 40 g carbs, and 28 g protein.

APPLE SPICE CAKE

This is an old newspaper clipping from the Bedford Daily Times Mail of Bedford, Indiana. The clipping doesn’t say but I imagine the recipe was in an “Appleacres” ad. Appleacres is a local business there that specializes in apples from their own apple orchards.

Mix together 2 cups chopped apples, 1 cup sugar and let stand for 15 minutes.

Add:

1 egg

1 cup flour

1/2 cup nuts

1/2 cup raisins

pinch of salt

1 tsp cinnamon

1 tsp nutmeg

1 tsp soda

1/2 stick butter

Mix all together, pour into a greased pan and bake at 350 degrees for 25 to 30 minutes. Delicious!

Sometimes we all just want a little comfort food.  And in all honesty, most comfort food is tasty, easy, and economical which makes it perfect during some of the current situations we face.  Here are some old recipes from my earlier years that make great comfort food casseroles.  Enjoy Sarah’s Beef and Macaroni Bake the next time you need comfort.  Who wouldn’t feel comforted by macaroni, cheese, ground beef, etc sprinkled with bread crumbs and baked?

SARAH’S BEEF AND MACARONI BAKE

1 1/2 to 2 quarts boiling water

6-oz elbow macaroni

1 tsp salt

1/4 cup chopped parsley

1 can mushroom soup

3/4 cup water

1/4 tsp garlic salt

1/2 cup shredded sharp cheddar cheese

1/4 cup butter

1 small onion, chopped

1/2 lb ground beef

1/2 cup buttered bread crumbs

Add the 1 teaspoon salt and macaroni to the boiling water and stir until the macaroni is flowing freely. Cook until the macaroni is tender.

Meanwhile, melt the butter in a saucepan. Add the parsley and onion. Cook about 3 minutes over low heat, stirring occasionally. Blend in the soup and the 3/4 cup water. Heat mixture to boiling, stirring constantly. Remove from the heat and stir in the 1/4 tsp garlic salt and cheese.

Brown ground beef in a skillet and drain off the excess fat. Stir beef into the cheese mixture. Drain macaroni. Add macaroni to the beef mixture. Turn into a greased 1 1/2-quart casserole dish and sprinkle with the bread crumbs.

Bake in a 350 degree oven for 20 minutes.

The first recipe is for a tasty dip. What would any party be without a good dip?

Tasty Cheese and Onion Dip

What You Need:

1 (15 oz.) jar Cheese Whiz 1/3 C beer 1/2 C onion, finely chopped





How to Make It:

Melt the Cheese Whiz in the microwave as directed on the jar label. Place the melted cheese in a serving bowl. Stir in the beer until well combined. Fold the chopped onions into the cheese mixture. Serve at room temperature or on a warming plate.

Serves: 16

Serve this dip with pretzels, cubes of bread or rye rounds and watch it disappear quickly.

This tasty dip can be served as a started in the form of a fondue. If you serve it as a starter serve it with cubes of tasty crusty bread. You can make your main course smaller after this as your guests will really tuck into the bread and will not be so hungry afterwards!

The next St. Patrick’s Day recipes are for tasty corned beef puffs. The puffs may be a little bit of a challenge if you have not made them before. The most important part is to stir the flour into the mixture until it forms a ball in the middle of the pot. Other than that they cannot really go wrong. It is actually much easier than it may sound. Try them once in advance and you’ll be able to make them for your guests with confidence!

Tasty Corned Beef Puffs

What You Need:

1/2 C flour 1/2 C rye flour 2 t parsley flakes 1/4 t salt 1/2 t + 1/8 t garlic powder, divided 1 C of water 1/2 C butter 4 large eggs, well beaten 1/4 C caraway seeds 2 (8 oz.) pkgs. cream cheesed softened 1/2 C mayonnaise 1/4 C sour cream 2 T chives, minced 1 t horseradish mustard 2 (2 ½ oz.) pkgs. deli styled corned beef, chopped 10 green olives, chopped





How to Make It:

Set the oven temperature to 400 degrees and allow the oven to heat while preparing the puffs. Place both types of flour in a mixing bowl. Add the parsley flakes and salt. Sprinkle in the 1/2 t of the garlic powder. Toss to combine the ingredients together well then set aside. Pour the water into a small saucepan. Add the butter and place the saucepan over medium heat. Bring the water to a brisk boil and allow the butter to melt. Carefully add the flour mixture and stir until balls begin to form. Remove the pan from the heat and carefully stir in the eggs until well combined. Grease a large cookie sheet well. Drop the dough mixture by a tablespoon onto the prepared cookie sheet about 2 inches apart. Sprinkle the caraway seeds over the top of each dough mound. Bake 18 minutes or until a nice golden brown. Remove to wire racks and cut a small slit in the side of each puff to allow the steam to escape. Place the softened cream cheese into a medium size mixing bowl. Fold in the mayonnaise and sour cream until well combined and the mixture is smooth. Add the chives and mustard and blend the ingredients together well. Fold the corned beef into the mixture until completely combined through the mixture. Add the olives and blend in well. Cut each puff in half with a sharp knife beginning where you made the original slit. Spread the filling onto the bottom half of each puff. Place the top half back on the bottom half of each puff. Refrigerate for at least 30 minutes before serving.

Serves: 24

If you are cooking corned beef for your dinner use small portion to make this filling instead of the deli corned beef. It will take 1/2 to measure out the same amount. Onions can also be added in place of the olives if you prefer.

Please do not be afraid of this recipe, once you have mastered it, it will become one of your favorite recipes, not only a St. Patrick’s Day recipes but a favorite recipe for all holidays and occasions. I hope you will enjoy these recipes for St. Patrick’s Day.

Free soul food recipes have changed and many people, especially medical experts, claim they’re slowly changing for the better. Those important changes have come in the way of not only ingredients but the way the meal are cooked and prepared.

The traditional southern cooking methods are slowly fading away like a block of ice in the July sun. For example, you’d have to look hard to find a recipe that calls for lard or other animal fat in their soul food recipe now. Most have eliminated cooking with lard or any animal fat in their recipes, a staple in all southern cooking a few years ago. Another healthy change you’ll find now is the words sautéing, pan frying and steaming. These words are turning up in more and more soul food recipes. Words like deep-fat frying, boiling and char broiling is getting harder and harder to find on these sites for a specific reason, health risks.

More recipes site owners and publishers are responding to the call for healthier dishes by not only health and medical experts, but the public as well. In the past southern food has had the reputation as tasty, comforting and satisfying. Unfortunately it’s also had the reputation of being unhealthy by most health nutritionist. With the new health changes taking place more people concerned about their health or who just want to eat healthier are finding their way back to soul food recipes.

The changes has also won new converts to southern cooking who might have avoided it for health concerns. Now with the lighter cooking methods and the elimination of certain ingredients proven as unhealthy, more people continue to flock to southern style meals again - without the guilt.

r you need a pick-me-up after a rough day or you want to celebrate a good one, you might find yourself rummaging around the kitchen for some good ole’ fashioned comfort food. For many of us, comfort foods are simple in nature and often times remind us of pleasant childhood times. Some people might associate good childhood memories with apple pie and ice cream, eggs and bacon arranged in the shape of a smiley face, or peanut butter and jelly sandwiches. If you aren’t sure which comfort food YOU are in the mood for, I encourage you to read through the following recipes of popular comfort food favorites.

Green Bean Casserole

Ingredients:
4 cups of cooked, cut green beans
1 can of cream of mushroom soup
1 1/3 cup of French fried onions
1/2 cup of milk
1 tsp of soy sauce
a bit of black pepper

Directions:
In a large casserole dish, mix together the green beans, milk, cream of mushroom soup, soy sauce, pepper, and 2/3 cup of the French fried onions. Bake for 25 minutes at 350 degrees F (or until it starts to bubble). Remove from the oven and stir the beans well. Sprinkle the remaining French fried onions on top and put back in the oven for an additional 5 minutes or until the onions start to brown.

Macaroni and Cheese

Ingredients:
1/2 lb of Velveeta cheese
2 1/2 cups of uncooked macaroni noodles
3 tbsp of butter
1 qt of milk

Directions:
Melt the butter and pour into a baking dish with the macaroni noodles. Stir well until the butter coats all of the noodles. Cut the Velveeta cheese into chunks and add to the milk and macaroni mixture. Bake for about a half an hour at 325 degrees F.

Chicken and Dumplings

Ingredients:
4 cups of boneless, skinless chicken chunks
2 1/2 cups of chicken broth (add more if you like yours very soupy)
1 cup of sliced carrots
1 1/2 cups of chopped potatoes
salt and pepper to taste
1 bay leaf (optional, but nice!)

Directions:
In a large stew pot, simmer the chicken in the broth with salt and pepper on a low heat for about thirty minutes. Add the bay leaf, chopped carrots, and potatoes and increase to medium heat. Cook for 30 minutes, or until the potatoes have softened. Make sure not to overcook as the potatoes will turn mushy.

Dumplings:
1 cups of flour
2 tsp of butter
4 tsp of baking powder
1/2 tsp of salt
3/4 cup of milk

Combine the flour, baking powder, and salt together. Slowly add in the milk and butter, then mix thoroughly. If you prefer, you can add a teaspoon or two of parsley flakes. Drop by the spoonful on top of the chicken and broth during the last 15 minutes of cooking and cover.

Oatmeal Raisin Cookies

Ingredients:
3 cups of uncooked oats
1 1/2 cups of raisins
1 cup chopped walnuts (optional)
1 1/2 cups of flour
1/2 cup of granulated sugar
1 cup firmly-packed brown sugar
1 cup of softened butter
2 eggs
1 tsp of baking soda
1/2 tsp of salt
1 tsp of cinnamon
1 tsp of vanilla

Directions:
In a large bowl, beat together the granulated and brown sugars with the butter until it turns creamy. Mix in the eggs and vanilla. Stir in the flour, baking soda, salt, and cinnamon. When this is well mixed, add the oats, raisins, and walnuts. Stir well, then drop by the spoonful onto un-greased cookie sheets. Bake for about 12 minutes at 350 degrees F. Allow the cookies to cool on the cookie sheet a few minutes before removing them to wire racks to cool completely.
